Lots of crushed green leaves, rapeseed oil, water crackers and leavened bread. Water brought out touches of miso, butterbean hummus, grassy olive oil, starched linens and bouquet garni of dried herbs. The neat palate displayed the richness of buttered oatcakes, digestive
