Initial notes included beach foam, exotic fruit juices, fragrant peat smoke drifting in coastal air, crushed sea shells, seaweed crackers and lychee. Reduction brought softer notes of coconut, seawater, eucalyptus, herbal medicines, kiln smoke, natural tar and smoked olive oil. The neat palate displayed a wonderfully soft, waxy and peaty
