製程：多數年份在釀造上有50%為新橡木桶，但2021年份新桶比例較低。

葡萄品種：100% Sangiovese。

活用過去在布根地學習的釀造理念，採用部分含梗的方式進行浸泡，萃取出最鮮活的香氣與花青素。為保留新鮮爽的香氣，因此不適合過度培養，二次瓶陳30個月，所以規範為NV香檳。

Oiry特級村為一座低調的白丘區特級村，地勢平坦表土深度只有15公分覆於白堊土底岩之上。葡萄酒風格相當緊緻，充滿礦物感。
