It undergoes fermentation in uncoated cement tanks and matures on fine lees for nine months with constant btonnage. The result is a wine of remarkable character, produced in limited quantities. Its pale lemon yellow color hints at the freshness within. On the palate, it is medium bodied, mineral, and dry, with notes of vanilla and butter, accompanied by vibrant sapidity and pronounced
